00:15.2
I greet you dear cooking lovers
00:15.3
00:18.6
I'm Aby and today we start in a new culinary story
00:18.7
00:21.2
I was in Israel several years ago
00:21.3
00:23.4
and there I ate a patè for the first time
00:23.5
00:24.5
that conquered me on the spot.
00:24.6
00:27.6
I asked what it was made of and I was told it was made of chickpeas
00:27.7
00:30.3
it was unknown to me at the time
00:30.4
00:31.6
but now I adore it.
00:31.7
00:34.0
I cook it in many ways
00:34.1
00:35.1
and today I'm gonna present to you
00:35.2
00:37.7
a recipe of hummus in 3 colors and different flavours.
00:37.8
00:41.6
Enough talking, let me show you the king of patè in my kitchen
01:07.1
01:09.4
For the classic recipe of hummus we're gonna use:
01:09.5
01:11.8
250 grams (8.8oz) of boiled chickpeas
01:11.9
01:12.9
3-4 tablespoons of olive oil
01:13.0
01:14.4
1 tablespoon of sesame paste
01:14.5
01:16.3
2 garlic cloves
01:16.4
01:18.7
juice from half of a lemon
01:18.8
01:20.2
salt and paper to taste
01:20.3
01:22.1
and half a teaspoon of thyme.
01:22.2
01:24.4
For the baked pepper hummus we use:
01:24.5
01:26.1
250 grams (8.8oz) of boiled chickpeas
01:26.2
01:27.3
2 baked peppers
01:27.4
01:28.7
1 garlic clove
01:28.8
01:30.1
juice from half of a lemon
01:30.2
01:32.0
3-4 tablespoons of olive oil
01:32.1
01:33.1
salt to taste
01:33.2
01:35.6
and half a teaspoon of smoked paprika
01:35.8
01:38.1
And for the olive hummus we use:
01:38.2
01:40.1
250 grams (8.8oz) of boiled chickpeas
01:40.3
01:41.8
4 tablespoons of olive paste
01:41.9
01:43.2
3-4 tablespoons of olive oil
01:43.3
01:44.9
1 clove of gralic
01:45.0
01:46.8
juice from half of a lemon
01:46.9
01:48.2
salt and pepper to taste
01:49.2
01:50.9
You can use canned chickpeas
01:51.0
01:53.8
or dried chickpeas, as I used
01:53.9
01:58.4
that I've boiled it before with salt, pepper and a bit of thyme
01:58.7
02:00.6
We start with the classic hummus
02:00.8
02:04.1
were we add a garlic clove
02:04.3
02:07.6
the sesame paste, Tahini is called
02:07.7
02:12.9
I find it like this, from DM I've bought it
02:14.2
02:16.0
Or you can make it yourself at home.
02:16.8
02:18.2
This I'm gonna tell you another time.
02:18.6
02:22.5
Lemon juice, that sesame paste, oil and salt.
02:23.2
02:27.4
Over the boiled chickpeas we add the sesame paste
02:29.8
02:31.6
2 garlic cloves
02:33.0
02:35.9
And approximately 3 tablespoons of lemon juice
02:36.0
02:38.3
It's the juice from half of a lemon
02:38.4
02:42.2
And olive oil, 3-4 tablespoons
02:47.1
02:49.6
After we mix it, we'll see if it needs more oil, if so then we add it
02:50.1
02:51.2
Salt
02:52.0
02:54.5
A little bit of pepper
02:55.2
02:58.1
And I also like a little bit of thyme.
03:01.1
03:03.0
Half of a teaspoon
03:03.5
03:04.8
And now we mix it
03:05.1
03:09.7
And with a vertical mixer, we mix it until it becomes a fine paste.
03:16.6
03:20.2
Because at this point I think it's very thick
03:20.4
03:23.5
I've kept some boiling water
03:23.6
03:26.1
If you don't have this water and you use canned chickpeas
03:26.2
03:28.4
you can simply put some water.
03:29.7
03:32.2
And I want to dilute it a little.
03:35.3
03:36.7
We continue to mix.
03:40.0
03:42.2
That's how the classic hummus looks.
03:43.6
03:46.0
We put it aside and we do the others.
03:46.1
03:48.1
This one will be with baked peppers
03:48.2
03:49.6
we add a garlic clove
03:50.2
03:52.3
the baked pepper
03:53.3
03:55.3
the lemon juice
03:56.2
03:58.2
the oil
04:01.1
04:02.5
salt
04:05.5
04:07.4
and for this one I like to add
04:08.0
04:10.8
smoked paprika
04:13.6
04:14.5
It will be so good
04:14.7
04:17.2
And as before we mix it
04:22.1
04:23.7
The baked pepper is also ready
04:23.8
04:28.0
As you saw, I dind't add the boiled chickpeas juice
04:28.1
04:31.7
because the pepper has enough liquid
04:33.0
04:35.1
It came out the right consistency
04:36.1
04:38.2
We put it aside and we prepare the other
04:39.3
04:40.7
The last one.
04:41.4
04:43.6
We put the garlic and the garlic paste
04:43.7
04:47.6
which you can find on the olive aisle, in the supermarket.
04:47.7
04:49.1
If you will still find it.
04:51.0
04:53.8
So, the olive paste
04:54.8
04:56.1
the lemon juice
04:58.0
04:59.6
and the oil
05:04.4
05:05.5
Do not exaggerate with the salt
05:05.6
05:09.7
because this olive paste is salty enough.
05:10.0
05:11.6
and a little bit of pepper
05:13.4
05:14.8
And we move on to mixing
05:17.5
05:19.3
Even this one is a bit thick so
05:19.4
05:22.7
I will dilute it with a little boiled chickpeas juice.
05:34.9
05:37.3
And now it's time to tell you what came out
05:38.2
05:40.5
I know everybody's taste
05:40.6
05:42.5
and it's very hard for me to decide
05:42.7
05:43.8
which to begin with?
05:44.7
05:48.7
Let's start with the classic one.
05:53.9
05:56.8
It doesn't have too much garlic or too much sesame paste
05:57.1
05:59.6
everything is in equilibrium, a little bit of each
05:59.9
06:02.1
and the taste is perfect.
06:02.4
06:05.6
We move on, to the one with baked pepper
06:09.4
06:12.4
This one I like because it taste like summer
06:13.2
06:15.7
my mother's garden
06:17.2
06:20.0
baked pepper, is my favourite
06:21.2
06:23.3
We move on to the last one
06:24.3
06:26.6
with olives
06:27.0
06:30.2
The color resembles liver patè
06:30.3
06:32.5
so if you did't knew what it's made of
06:32.6
06:34.6
you would say that it's liver patè.
06:38.3
06:42.5
I like olives very much and I'm an olive lover
06:43.0
06:45.4
So I like this one too, very much.
06:46.4
06:48.5
I can't decide between the three
06:48.6
06:51.0
now all you have to do is try them
06:51.1
06:53.7
and decide which one you like best.
06:53.9
06:55.4
What do you say? Nothing easier
06:55.5
06:58.6
But from taste to appearance it is worthy of a festive meal.
06:59.0
07:00.2
I'm convinced that it conquered you
07:00.3
07:02.1
and I hope that you'll try it as soon as possible.
07:02.2
07:07.0
My dears,I want this recipe to be useful too, and to be helpful to you
